Filled
CHRISTMAS COOKIES
(Sweet Ravioli)
(I bake these Cookies Every Year -
to most Everyone's Delight-!)

Preheat Oven to 350*
Using your Kitchen Aid:
Cream:
One Cup (2 cubes)
Softened Unsalted Butter
with
2/3 Cup Granulated Sugar
Add:
1 Large Egg
1-1/2 Tsp. Vanilla
1/4 Tsp. Almond Flavoring
And:
The grated Zest of 1 Medium Lemon
Slowly Add:
2-1/2 Cups Flour
1/8 Tsp.Salt
1/4 Tsp.Baking soda

Have Ready:
1 Cup Apricot Jam
And/or Apple Butter Preserves
and Cookie Cutters.
*************************
Divide dough in Half -
Roll out to 1/8 inch thickness.
Cut into desired Shapes.
Lay first half of Cookie on a Baking Sheet.
Dot in the center with Jam filling.
Cover with second half.
Press down Edges with tongs of a Fork.
Bake at 350* for 9-12 Minutes -
(or until - Edges are just Brown.)
Cool.
Store in Air-tight Container 3-4 days-
Or may be kept in freezer up to 3 Weeks.
